(1) 20 oz. cans Manning’s Hominy
1 tsp. prepared mustard
1 ½ cup shredded extra-sharp low-fat cheese
½ cup unseasoned bread crumbs
1 cup skim milk
2 tbsp. flour
½ tsp. salt
Whisk flour into milk in heavy saucepan. Add salt and mustard, stirring constantly, heat to boiling. Boil 1 to 2 minutes then remove from heat. Stir in cheese and add hominy. Break up hominy and pour mixture into baking dish. Top hominy with bread crumbs. Bake at 350º for 20-30 minutes. At end of baking period sprinkle remaining cheese on top and bake until melted.
